Our story

Chive belongs to Lou Kolbauer, who opened it in 2013 and still runs the kitchen's creative side.

Inside Chive on Miracle Mile

Chive opened in a small space on Old Dixie Highway in 2013. The quick, creative food found a loyal lunch crowd fast, and that same year Lou was named Top Chef of Vero Beach. As more people came in, the menu grew to include house favorites for first-time guests.

A second location opened on Royal Palm Pointe in 2014 with more seating. In late 2018 Chive moved to its current home on Miracle Mile, with a full bar, more tables and a bigger patio.

Before each opening, Lou spent months painting, cleaning and making the art on the walls himself. Look around when you come in. A lot of it started out as old shipping pallets.

In 2017 Lou also opened Green Marlin Restaurant & Raw Bar, a casual spot for fresh oysters and seafood in Vero Beach.

Tell us what you think. We read it, and we love cooking for you.
